James,I tried out the recipe for Buffalo Chicken Soup. I took it to an Emmaus function and have heard many comments and people wanting the recipe. (By the way, your recipe said to sauté the chopped onion in olive oil then add garlic. I did that in the pot I was making the soup in like the recipe said and it turned out great.)
Anyway, the reason I’m sending you this e-mail is because of Eric’s response. I did not bring all of the soup to my Emmaus function. I just bring what will fit in my crock pot. He had some of the soup last night. He has enjoyed your food in the past, including at the Shepherd’s Fold banquet. But he has never tried any of your “original” recipes. Last night he said that you finally did it. You really impressed him. He enjoyed the soup then remembered that I had toppings. I ran out of the blue cheese but had plenty of celery left over. He said that the addition of raw celery to the soup was original and very tasty. It made the soup and really impressed him. I will have to get more blue cheese for the rest of the soup.
By the way, I am sharing your recipe with the people who attended the meeting Saturday.
